Creamy Roasted Tomato Basil Soup

This delicious easy to make soup will be your next favorite.

5 Organic Tomatoes (Cut Into Quarters)

2 Tbsp Extra Virgin Olive Oil

1 Tbsp Coconut Oil (Virgin Unrefined)

1 Yellow Onion - Chopped

4 Minced Garlic Cloves

3 Cups Free Range Organic Chicken Broth

6oz Organic Non-GMO Tomato Paste

1/4 Cup Fresh Basil

1 Tbsp Dried Basil

2 tsp Salt

1 tsp Black Pepper

1/2 Cup Organic Heavy Whipping Cream


11. Preheat oven to 425.

22. Drizzle the olive oil and sprinkle salt and pepper on the quartered tomatoes and bake for 20-25 minutes.

33. Heat coconut oil in large pot over medium heat.

44. Cook onion and garlic in coconut oil until the onions turn translucent.

55. Add tomatoes and cook for one minute.

66. Add broth, tomato paste, basil, salt, and pepper and mix until the paste dissolves.

77. Bring all to boil and then turn to low and cook for 30 minutes.

88. After 30 minutes, blend in heavy whipping cream with immersion blender.
