Mashed Cauliflower

A wonderful side dish to any Reboot entre.

  • Prep: 10 mins

Ingredients

2 Heads Cauliflower

About 2 tbsp Grass-fed Butter

Salt (Himalayan Preferred) & Pepper

Directions

11. Cut the core from the cauliflower, break flowerets and either steam or parboil until fork tender.

22. Drain, reserve 1/4 to 1/2 cup liquid.

33. Blend with immersion blender (I had success with a pastry blender once and bet you can use a masher/ricer).

44. Add liquid slowly until almost the right consistency, then add butter, salt, pepper to taste.

I have added roasted garlic before too!
