 1 lb Shrimp, Deveined
 1/2 cup Jasmine Rice
 1/3 cup Onion, Chopped
 1/3 cup Celery, Chopped
 1/3 cup Green Bell Pepper, Chopped
 2 T Olive Oil
 Bay Leaf
 1/4 teaspoon Crushed Red Pepper
 1 cup Crushed Tomatoes
 1/4 teaspoon Dried Oregano
 1/4 teaspoon Dried Thyme
 1/2 Lemon
 2 cloves Minced Garlic
 1 teaspoon Paprika
 1/2 cup Parsley, Chopped
 1/2 cup Scallions, Sliced
 Sea Salt and Ground Black Pepper

Sauté onions, celery and bell pepper in a medium saucepan with 1 T olive oil for 3 minutes.

Add rice and stir to coat.

Stir in thyme, oregano, paprika, crushed red pepper, bay leaf, and salt.

Stir in tomatoes and ¾ cup water. Cover and simmer 15 minutes.

Fluff with a fork, remove bay leaf, and stir in scallions.

Meanwhile, heat 1 tablespoon olive oil in a large nonstick skillet. Add garlic and sauté 1 minute.

Add shrimp, juice from 1/2 lemon, and salt and pepper to taste. Sauté 5 minutes or until shrimp are done.

Stir shrimp into rice and sprinkle with chopped parsley.
