This is one of my go-to recipes for cooking out in the Summer and entertaining. It’s perfect with a side salad and if entertaining, don’t forget the rebooted margarita.

 2lbs grass-fed sirloin, cut into large cubes.
 kosher salt
 black pepper
 3 red jalapeno peppers, seeded and chopped
 1/4 cup apple cider vinegar
 2 large green peppers
 2 large white onions
 cherry tomatoes
 2 garlic cloves
 1tbsp tomato paste
 2 tbsp coconut aminos
 BBQ skewers

1. Place meat in a bowl and sprinkle with salt and pepper.

2. Blend (with high speed blender) the jalapenos, garlic cloves, apple cider vinegar, tomato paste, and coconut aminos into a marinade.

3. Marinate the meat for an hour.

4. Cut the green peppers and onions into large squares.

5. Skewer everything, alternating between meat/veggies.

6. Grill until the meat is medium rare.

If you're short on time, skip the marinade stuff and just season the skewers with the salt and pepper and you're golden. The marinade is just a little extra oomph.
