A wonderful side dish to any Reboot entre.

Prep Time10 mins

 2 Heads Cauliflower
 About 2 tbsp Grass-fed Butter
 Salt (Himalayan Preferred) & Pepper

1. Cut the core from the cauliflower, break flowerets and either steam or parboil until fork tender.

2. Drain, reserve 1/4 to 1/2 cup liquid.

3. Blend with immersion blender (I had success with a pastry blender once and bet you can use a masher/ricer).

4. Add liquid slowly until almost the right consistency, then add butter, salt, pepper to taste.

I have added roasted garlic before too!
